TATIANA’S EGGPLANT “CAVIAR”

 

Ingredients:

 

1 large eggplant

1 large carrot

1 large yellow onion

1 large green pepper

2-3 large tomatoes (start with 2, add another one if you feel like)

1/3 cup vegetable oil

Salt, pepper to taste

 

Cut all ingredients in small cubes (~1/2”, don’t cut too small cube, you’ll end up with mash!). Heat any good vegetable oil (sunflower is our best choice, but any could do just as well) in heavy pot or deep frying pan (or use Wok - very convenient). Add all ingredients and cook on medium heat until all vegetables are done – DON’T OVERCOOK (unless you want it). Add salt and pepper to taste
